Extra Easy Enchilada Sauce

Extra Easy Enchilada sauce is Especially Good!

I’ve done a lot of searching to find an extra-easy enchilada sauce that has the right amount of spices. It needed an authentic taste and no tomatoes. I had depended on the canned variety for years, but knew it could be better. I looked for the right recipe that wasn’t too time-consuming or complicated.

No Going Back!

Here it is, I’ve found it! And finding the right blend was very fulfilling. I haven’t purchased store-bought, canned varieties since using this recipe. I believe if you make this, you’ll be on Team Homemade Enchilada Sauce, as well! You’ve gotta try it! As a matter of fact, you should probably make a double batch to freeze. Then you’ll have it ready to go for your next batch of enchiladas or burritos. (Yeah, I’m that confident!)

I’ll betcha!

I’ll bet you already have the ingredients right in your cupboard now. Do you have faux beef broth or vegetable broth? How about chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper? And all that’s left to complete this extra-easy enchilada sauce is all-purpose flour and vegetable oil!

But even if you don’t have these items, you can find them all, right at your local market. And if you just wanna order online, click on the links and have them sent right to your door! It’s a breeze to make and is less expensive than the cans.

And it’s without all the chemicals, preservatives, or nastiness that some of the cans contain. You control the spiciness levels. Then, voila! The final product is soooooo much better tasting than those found on the store shelves.

Your new Extra Easy Enchilada Sauce recipe will surprise your family and friends. They may ask what fancy Mexican restaurant chef has given you their secret recipe. It’s your call if you want to share this!

But I’d like to pass on the enchilada sauce love to you. I think it’s too good to keep to myself. Whatever you decide, I hope you love the recipe too!

Extra Easy Enchilada Sauce

Ingredients Method Notes

Ingredients
  

  • 1/4 cup vegetable oil
  • 1/4 cup all purpose flour
  • 2 cups faux beef or vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon cayenne pepper

Method
 

  1. 1.) In medium saucepan, whisk together the oil and flour and then turn on heat to medium, whisking for about 5 minutes. It will be a light tan color. 2.) Whisk in all the spices, cooking for another 30 seconds. 3,) Slowly start to whisk in the broth in a thin, steady stream until all broth is added. 4.) Let simmer for a couple minutes on low to thicken a bit, whisking a few times until done.

Ethical Enchiladas and Extra Easy Enchilada Sauce are a go-to Mexican meal! Make our Red Rice Revolution and Amy’s Refried Beans to go with it, too. Then just chop up an avocado and top with a little cilantro and perfecto! Love, love, love this for dinner. ( And love it the next day for lunch even more. Just heat and serve, and you’re good to go!)

So, unlike some dishes, ethical enchiladas are very forgiving. Because if you don’t like flour tortillas, use corn! Don’t have a vegan chicken product? Use black beans! You don’t like corn, leave it out!

Now, go make this recipe and you will see how easily adaptable it really is! It’s the white T-shirt of your recipe wardrobe. Dress it up or down, it just works.

Ingredients Method Notes

Ingredients
  

  • 8 flour tortillas
  • 1 package vegan chicken like Gardein chicken strips or scallopini can also use tempeh, rehydrated soy curls, or cubed tofu
  • 1 1/2 tablespoons cooking oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup red onion diced
  • 1/2 cup corn
  • 4-8 ounces canned chopped chili peppers
  • 14 ounce can diced tomatoes
  • 14 ounce can black beans drained and rinsed (optional if using vegan chicken)
  • 1/2 teaspoon flour
  • 1 recipe extra easy enchilada sauce see recipe note below or 10 oz can enchilada sauce
  • 1 ripe avocado optional or see recipe notes below for guacamole
  • 1/4 cup chopped fresh cilantro, or 1 tablesoon dried cilantro, optional

Method
 

  1. 1. Preheat oven to 350 degrees Fahrenheit.
    2. Heat oil in a large skillet. Add vegan chicken to the pan and lightly brown. Sprinkle with spices (cumin, garlic powder, chili powder, cayenne pepper, salt, and black pepper), then flip chicken over to lightly brown on the other side. Remove from the pan and set aside.
    3 Add onion to the same pan (adding a bit more oil if necessary) and cook to soften until translucent
    4. Add corn, chili peppers, and tomatoes (and drained black beans if using) and stir. Cook 1 minute, then add flour (stirring well after adding to avoid clumps). Remove from heat.
    5. Warm tortillas (wrap in a damp paper towel and microwave for 30 seconds or wrap in foil and place in preheated oven for 5 minutes).
    6. Lightly coat the bottom of a 13 x 9-inch casserole pan with enchilada sauce.
    7. Place a heaping 1/4 cup of filling into the center of a warmed tortilla, then roll up and place in the casserole pan. Continue with the rest of the tortillas.
    8. Pour enchilada sauce over enchiladas, covering well.
    9. Bake in preheated 350-degree oven for 20- 25 minutes.
    10. Remove from oven and top with chopped avocado and cilantro if using. Serve.

Yeah, I went there. But we’re not talking politics here. And whether you vote Blue or Red, or are still debating what word was used in the 2016 Presidential debate rhetoric, our Bigly Big League Breakfast Sandwich will hit a home run with everyone, no matter what you call it!

The Beginning of the Bigly Big League Breakfast Sandwich

So, the Breakfast Sandwich began with a wish to recreate one of our family’s favorite morning meals: the breakfast sandwich. Made with egg, cheese, and sausage (or bacon) on an english muffin ( or roll or toast), this was a staple of our get-up/get-moving start to the day.

Whether we made them at home or picked them up from our local deli, we depended on them many days a week. Starting out vegan was a breakfast challenge. Every part of this sandwich, especially the egg, proved difficult to substitute.

Gradually, we found vegan-friendly bread and english muffins, and then sausage, bacon, and even cheese. But eggs were the holdout. Eggs were the elusive holy grail.

Tofu Scramble built the bridge to the Sandwich

When we found a great recipe for seasoning a tofu scramble in the Gentle Chef’s book by Skye Michael Conroy, it was a game-changer.

We started making tofu scramble regularly, and it was good. Yet we still craved an easy, out-the-door version for our “get-it-to-go” lifestyle.

Alecia segued the seasoning into our version of what is now the Bigly Big League Breakfast Sandwich, and our search is over! This is the answer for the vegan equivalent of the deli version breakfast bacon, egg, and cheese (or sausage, egg, and cheese) sandwich. We believe you’ll like it too! So here’s a little pictorial view to get you out of bed and ready for breakfast!

Bigly Big League Breakfast Sandwich

A bipartisan breakfast sandwich for everyone!

Ingredients Method Notes

Ingredients
  

  • 1 16-ounce container extra firm organic tofu
  • 2 Tablespoons vegan butter or cooking oil
  • 3 Tablespoons nutritional yeast
  • 2 teaspoons onion powder
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 2 teaspoons kala namak (black salt) optional- it gives a sulfur egg-like quality
  • 6 english muffins, rolls, or another vegan bread choice
  • 6 vegan sausage patties or vegan bacon strips like gimmie lean sausage, field roast maple sausages, or Lightlife fakin bacon tempeh
  • 6 slices vegan cheese like follow your heart or chao brands

Method
 

  1. 1.- Drain tofu and press out excess moisture. 2.- mix together nutritional yeast, onion powder, paprika, turmeric, and kala namak (if using) 3.-Heat skillet with butter or oil on medium- medium/high 4.- Slice tofu block in half evenly. Then slice each half into 3 equal patties. 5.- place spice mixture into a shallow plate and dip the sides then back and front of the tofu patties into the mix to coat. 6.- When the skillet is hot, add coated tofu patties to the skillet and cook each side for about 5 minutes or until golden and browning a bit. (See photo) 7.- While "egg" patties are cooking, toast english muffins or rolls to your liking then add 1 slice of cheese to 1/2 of each muffin and return to the toaster oven or melt cheese briefly in the microwave or oven. 8.- When patties are done cooking, set them aside on a plate. 9.- In the skillet used for patties, cook up the sausages or bacon to your liking. 10.- Assemble sandwiches with egg patties, sausages (or bacon), and the cheese-topped english muffin or roll. ENJOY or wrap up and refrigerate for the week ahead!

Notes

If you’re feeling fancy, we like to occasionally chop up about 1/3 cup onions into a small dice and cook them up in the pan to add to the sandwich. Try it!

Kick-Ass Killer Kale Salad is a Powerful Green Superhero

Yep, the Kick-Ass Killer Kale Salad is my new favorite salad, and although I’m late to the kale craze, I’m solidly on board now!

Honestly, I could eat this salad every day! And if it weren’t for the protests I know I’d get from The Big Guy, I would think about making this every day. (His tastes haven’t evolved to embrace kale…yet!)

Before Kale Salad- The Iceberg Days

In the beginning, when I was growing up, the only type of salad we ever ate was iceberg lettuce, a wedge of tomato, and maybe a cucumber (with lots of dressing for me).

My apologies to the iceberg lovers (I’m looking at you, my Big Guy!), and I don’t like to play favorites, or call out the losers, but to put it mildly, it is NOT my favorite.

And I’m pretty sure cardboard is more satisfying. Ok, ok, enough said.

So, I didn’t eat many salads back in the day. I surprised a lot of non-vegans when I said I was vegan and that I didn’t like salads all that much! They assumed that was all we ate!

Then came Spinach!

But with spinach added to the salad game, I found a new appreciation for this menu starter.

Then add some red onion, strips of red pepper, and creamy dressing, and I was in love. Finally, I found a green salad I enjoyed eating.

More recently, the Field Greens Salad

Discovering all the many types of edible green leaves has been an exciting improvement.

And adding different ingredients like fruits, nuts, and citrus, which weren’t usually a part of the salad experience, definitely kicked it up more than a notch!

But KALE, Come on! The Kick-Ass Killer Kale Salad is the King!

No question. The flavor of this Kick-Ass Killer Kale Salad is off the charts, with no other green leaf salads close behind!

Yes, I love it so much, and if you haven’t tried it yet, you must.

Because now I see kale in the grocery store and have to buy it since it’s kinda got me addicted!

That yummy, garlicky, lemony, chewy, spicy goodness satisfies in a big way.

And bonus, if there’s any leftover, (unlike other soggy salads), it’s still delicious (maybe even better), the next day.

So- sorry, Iceberg, Spinach, and various Field Green Salads: there’s a new salad in my town that has taken your place.

I love you the best, Kick-Ass Killer Kale Salad!

Kick-Ass Killer Kale Salad

Ingredients
  

  • 1 big bunch kale leaves (About 10 ounces)
  • 4-6 cloves garlic, slivered/ thin sliced
  • 1/3 cup olive oil
  • 3 tablespoons fresh squeezed lemon juice (about 1 lemon)
  • 1/3 cup vegan parmesan cheese
  • 1/2 teaspoon salt
  • pinch red pepper flakes optional
  • few grinds black pepper

Method
 

  1. 1). Lay kale leaves on a cutting board, folded in half so the rib is on one side, not in middle. Slice off the rib down the length of the leaf. Discard ribs. 2). Cut up leaves into bite-size pieces and add to a large bowl.3). Add all the rest of the ingredients to the bowl and start massaging and squishing everything together with your hands for at least a few minutes. (you can wear disposable food-safe gloves here) 4). Adjust seasonings to your taste and then enjoy! Lasts 3-4 days in the fridge.

Well, the team consists of 4 qualified participants that are ALL IN and ready to BRING IT on Race Day – Saturday, September 15.

Coach Liz Liggon– Coach of the East End Herd and personal trainer for people interested in a plant-based diet.

Jay Shah runner who competed in the Wall Street Run, this past spring, 2018.

Alecia Moore– After running the 10K NYC Race for the Farm Sanctuary of Watkins Glen last year, Alecia’s goal is to beat her previous best time. Follow her on our Instagram and Facebook connection as she and the group readies for the race!

Zack Moore– Zack (aka-wildman) recently placed 1st in the New Jersey Wildcat Ridge Romp/50-mile Ultra Race. Zack also competed in his first Ironman 70.3 Syracuse earlier this year!

Now it’s your turn to weigh in! The East End Herd needs your financial support to help them moooove to the finish line for the animal sanctuary. The inhabitants of the Farm need funds to make it through the winter. Necessities include feed, veterinarian appointments, and straw for bedding.

The generous volunteers, who selflessly give their time helping at Lewis Oliver, will be cheering everyone on who contributes towards the animals’ welfare.

So, please donate whatever you can to the East End Herd which will be running for the sanctuary. They need your contribution to further this worthy cause.

Mushroom Rice Pilaf is a side dish that completes a veggie meal with satisfaction. It’s filling, flavorful and forgiving!

And it’s easy to change it up and make it your own with whatever veggie additions you have handy. You can use this recipe or add peas, asparagus, or chopped broccoli instead of the green pepper. It’s a great go-to rice addition for almost any meal!

When you don’t want potatoes or pasta but something a little different

That’s when you can reach for this recipe to round out your dinner plate! It plays nice with all the other vegetables and meat substitutes and it will make everybody happy. It’s also great when you have little on hand. Just a little rice, a handful of mushrooms, half a pepper, half an onion, and some vegetable broth become a lovely accompaniment to your meal.  It makes great leftovers as well!

Some of our favorite ways to enjoy Mushroom Rice Pilaf is with a vegan meatloaf (homemade or Gardein brand), roasted butternut squash, and brussel sprouts. We also like to have it with chick’n marsala (recipe coming soon!), and a baked sweet potato. Adding black beans and a sprinkling of vegan parmesan cheese would also work well as a main dish. Or, stuff it in par-boiled peppers, perhaps stir in a little Posh Pesto, cover with tomato sauce, and heat in the oven for a stuffed pepper version of this side dish. So any way you make it, it will be magnanimous, no doubt!

P.S. Also, it goes nicely with a glass of chardonnay.. a little for the pilaf, a little for you. Win-win!

Ingredients
  

  • 1 tablespoon cooking oil
  • 2/3 cup long grain white rice or arborio rice
  • 8 ounces mushrooms, diced
  • 1/4 cup onion, diced
  • 1/4 cup green pepper, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups veggie broth omit 1/2 cup if using wine
  • 1/2 cup dry white wine optional
  • 1/2 teaspoon oregano
  • salt and pepper to taste

Method
 

  1. Step 1: Heat oil in a skillet then add onion and green pepper. cook for about 3-5 minutes until softened. Step 2: Add in mushrooms, garlic, and oregano. Step 3: Cook and stir another 5 minutes until mushrooms have given up their liquid and just start sticking to the pan a bit. Step 4: Add in rice and stir occasionally, while cooking for another couple minutes. Step 5: Add wine (if using) and broth, bring to a boil then quickly reduce heat to simmer, give a little stir, and cover the pan with a well-fitting lid. Cook 15 minutes until rice is tender and liquids are absorbed. Step 6: Season with salt and pepper and serve.

The Hamptons Vegan is pleased to present: a peaceful pot pie.

Yes, this peaceful pot pie is vegan so that means no harm, no foul or fowl! It’s a piece of peaceful comfort food that you can make your own just by altering the veggies or faux meat ingredients. And you can use your own crust or use a store-bought variety.

Because this pot pie is a throwback to the comfort food you grew up eating. But without the meat or dairy. So it’s perfect for a cold winter night or when your tummy needs a warm hug. And it works great for potlucks, too!

Preparation for peaceful pot pie for potlucks and plenty of other things!

Some of the great things about the peaceful pot pie are the simple ingredients, the ease of preparation, and the freezability. Is that a word? Sorry, no, not a word. But I am using it anyway.

And another great thing is its portability, too! You can make one big pie or several little ones. They also reheat well for leftovers.

I love to make these ahead of time and have them ready to go at a moment’s notice. So when there’s just no time to start a whole meal from scratch, thaw it a bit, and pop it in the oven. And if you keep some individual pies handy in the freezer, everyone can grab a meal pie whenever it’s needed.

So we took these to our first vegan potluck at the Westhampton Beach Library! And they are welcome after a peaceful protest, too!

Need a pot pie hug?!

Because if you are in need of a warm hug now, head to the kitchen. Turn on some Norah Jones (or your go-to happy-music-to-cook-with station). Then pour a glass of wine (or chamomile tea) and assemble your peaceful pot pie ingredients into a lovely meal.

While you wait for your oven timer to ding, put on your comfiest clothes (if you haven’t already), have some cuddle time with your cat, dog, or human, (or other), and get ready to enjoy the rest of your evening. 

Because your cares will melt away after that the first bite of your tummy-hugging peaceful pot pie. Now take a couple of deep breaths, and slow it down. There. All will be right with the world again before you know it. So consider yourself hugged.

Pleased to Present: Peaceful Pot Pie

Ingredients
  

  • 1 package faux chicken, cut into 1/2 inch cubes like Gardein chik’n scallopini or Terryaki Strips or Butler Soy Curls (See recipe notes)
  • 1 cup sliced carrots
  • 1 cup frozen peas
  • 1/2 cup sliced celery
  • 1/2 cup chopped onion
  • 1/3 cup vegan butter
  • 1/3 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon celery seed
  • 2 teaspoons faux chicken or veggie broth base or use 1 veggie bouillion cube like Better than Bouillion No Chicken Base (see recipe notes for more)
  • 2/3 cup non dairy milk like Westsoy or Trader Joe’s soymilk
  • 2 9 inch unbaked pie crusts like Wholly Wholesome organic pie shells

Method
 

  1. Preheat the oven to 425 F.
  2. In a saucepan (about the 2-quart size), combine chick'n, carrots, celery, and peas. Add water enough to cover and bring to a boil. Then turn it down to a simmer for 15 minutes, uncovered.
  3. After 15 minutes, remove from heat and drain veggies with a strainer over a 2-cup or larger heatproof measuring cup to reserve the liquid. Set veggies aside. Add enough water to reserved veggie cooking liquid to measure to 1 3/4 cups. Add the 2 teaspoons broth base or 1 veggie bouillon cube and mix together. Set aside. (If using broth rather than base or bouillon, then use enough to measure to 1 3/4, omitting the water)
  4. In the same saucepan. veggies were cooked in, cook onion in the butter over medium heat until soft and translucent.
  5. Whisk in flour, salt, pepper, and celery seed. Cook for a couple of minutes, then slowly stir in broth and then the non-dairy milk
  6. Turn heat to low-med and simmer until thickened, stirring frequently. (A few minutes should do)
  7. Put one pie crust into a pie plate and then spoon veggies into the crust. Pour hot broth over vegetables in the pie crust. Top with remaining pie crust and then cut a few slits in the top crust for steam to escape.
  8. Place on a baking sheet and bake for 30-35 minutes until golden and bubbly.

Notes

we like Gardein Chick’n Scallopini or Gardein Chicken Terriyaki Strips (without the sauce packet) for our chick’n filling ingredient.
Also, Butler Soy Curls work very well, can be used for a variety of recipes, and can be purchased at Amazon. (must be rehydrated before using in this recipe)
Better than bouillon no chicken base is our go-to choice or Better than Bouillon vegetable base.
Wholly Wholesome organic pie shells are great if not using your own recipe and they make a gluten-free pie crust, too!
Other veggie broth choices are Pacific broth and Edward and Sons bouillon cubes.
