Righteous Red Rice Revolution!

A righteous red rice recipe that's revolutionary for all your side dishes... and then some!

Ingredients
  

  • 1 cup long grain white rice
  • 2 plum tomatoes diced
  • 1 cup onions diced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 3/4 cup vegetable broth
  • 1/4 cup tomato sauce
  • 1/4 cup fresh cilantro or 1 tablespoon dried
  • 1 teaspoon dried oregano
  • salt and pepper to taste

Method
 

  1. 1. Heat oil in a skillet over medium heat, then add onions and saute until soft and translucent.
    2. Add garlic and cook briefly, then add rice and cook for about 3 minutes.
    3. Add tomatoes, tomato sauce, and broth, and bring just to a boil.
    4. Add cilantro, oregano, salt, and pepper, and reduce heat to a simmer.
    5. Cover and cook for 15 minutes on low. Fluff with a fork and serve.

Notes

For a quick fix if you're out of fresh tomatoes:
Omit plum tomatoes and tomato sauce from the recipe and instead use 1 14.5-ounce can of diced tomatoes plus their juice.
