- 1. Heat oil in a skillet over medium heat, then add onions and saute until soft and translucent.2. Add garlic and cook briefly, then add rice and cook for about 3 minutes. 3. Add tomatoes, tomato sauce, and broth, and bring just to a boil.4. Add cilantro, oregano, salt, and pepper, and reduce heat to a simmer.5. Cover and cook for 15 minutes on low. Fluff with a fork and serve.
Notes
For a quick fix if you're out of fresh tomatoes:
Omit plum tomatoes and tomato sauce from the recipe and instead use 1 14.5-ounce can of diced tomatoes plus their juice.
