vegan brownie fudgy perfection

Ingredients
  

  • 1/3 cup brewed coffee (or water mixed with 1/2 tsp instant espresso or coffee granules), cooled to room temperature. 90 ml or 3 oz
  • 2 Tablespoons ground flaxseed 13 grams
  • 6 Tablespoons slightly melted butter 85 grams
  • 1 cup chocolate chips or chopped chocolate 170 grams
  • 1 cup brown sugar 200 grams
  • 1 teaspoon vanilla extract 5 ml
  • 1 cup all-purpose flour 120 grams
  • 1/4 cup cocoa or cacao powder 25 grams
  • 1 teaspoon baking powder 4 grams
  • 1 teaspoon salt 5 grams
  • 1/2-3/4 cup chopped walnuts or pecans (set a small amount aside to top frosting if using) 60-90 grams (optional)
  • 3/4 - 1 cup *chocolate frosting approx. 200 grams (optional)
*optional chocolate frosting
  • 4 Tablespoons soft butter 56 grams or 2 oz.
  • 1 cup vegan powdered sugar (organic is vegan) 120 grams
  • 1/4 cup cocoa or cacao powder 25 grams
  • 1/2 - 1 Tablespoon non-dairy milk or cream 7.5 - 15 ml
  • 1/8 - 1/4 teaspoon instant espresso or coffee granules (optional) .4 - .8 grams
  • 1/2 teaspoon vanilla extract 2.5 ml

Equipment

  • 1 large mixing bowl
  • 1 8 x 8-inch baking pan
  • 1 food scale optional
  • parchment paper for lining the baking pan optional
  • sieve for sifting optional

Method
 

  1. Preheat the oven to 350F/180C, then line the baking pan with parchment paper over 2 sides for easy lifting and removal. If not using parchment, lightly grease the bottom of the pan with vegan butter or oil.
  2. Mix the coffee and ground flaxseed in a small bowl, then set aside.
  3. In a microwave-safe bowl or on the stovetop, heat the chocolate chips (or chopped chocolate) until just melted. Be careful not to overcook it. (I microwave in 15-second increments, stirring well between each, just until no lumps remain). Set aside.
  4. In a large bowl, mix slightly melted butter with brown sugar until combined. Then add the coffee/flax mixture, the melted chocolate, and the vanilla.
  5. Sift the flour, cocoa powder, baking powder, and salt directly into the wet ingredients. (Or whisk the dry ingredients well in a separate bowl, breaking up any clumps, then add to the wet ingredients.) Mix until combined, but don't overmix.
  6. Add in chopped nuts if using.
  7. Spread brownie batter into the baking pan and level it out. Bake for 25- 30 minutes. They should look drier around the edges, but the center will appear wetter looking. and they will be puffed up. They will firm up and settle down as they cool. Fully cool them before slicing.
  8. Add frosting and top with nuts when they are cool, if using.
chocolate frosting
  1. Beat butter until light. Mix the coffee granules into the milk, microwaving for a couple of seconds if clumpy, then mix again to combine. Then combine all ingredients until fluffy.
