Ingredients
Method
- Slice up garlic cloves.
- Heat a large pot on medium and then add oil.
- Add in garlic and stir for a minute or two but don't brown.
- Add in the dash of cayenne.
- Add in all the spinach.
- Cook for 2 minutes, turning over with tongs to reach all the spinach and wilt but don't overcook.
- Remove from heat and add the dash of vinegar OR the squeeze of lemon juice.
- Add salt and pepper to taste and serve.
- Store leftovers in the fridge for up to a couple of days. Easily mixes into rice and pasta or casseroles. Also makes a nice topping on a sandwich.

***Bonus Recipe***
Spicy Spinach Sandwich
Mix 1 tablespoon mayo with 1/2 teaspoon balsamic vinegar.
Cut open a crusty roll and spread balsamic mayo on both sides.
Layer spicy spinach, roasted red pepper (from a jar), and sauteed mushrooms and onions.
A Pickle on top is optional.
