
Why should you make this Vegan Not Chicken Noodle Soup? Let me remind you…
You know the feeling when you’re coming down with a sore throat, a cold, or the flu? It’s so miserable. You want it to be over, ASAP.
But not many things can make you feel better except for some warm, homey, comforting soup.
And most people’s go-to soup for sickness is chicken noodle soup. But just because you’re vegetarian or vegan doesn’t mean you must miss out! (Thank goodness!) This recipe is made for all.
Additionally, this comforting soup is not just cruelty-free but also delicious and easy to prepare. We should call it Winning Soup, but I won’t complicate things. Let’s get to the recipe and get on with feeling better soon!
(It’s good even when you’re not sick too, of course!)
The Goods in the Good Soup
It’s a simple recipe with simple ingredients.
- Veggie Broth
- pasta/noodles
- celery
- carrots
- onions
- garlic
- faux chicken, *soy curls, chickpeas, or extra firm tofu– (All optional)
- salt and pepper
- parsley
- poultry seasoning (optional)
- Dulse sea seasoning granules (optional)

So first, I bring a medium pot of water to a boil on the stove and cook the pasta, breaking the fettuccine or other pasta into bite-sized pieces.

While I wait, I chop the celery, carrots, onions, garlic, parsley, and chicken substitute into similar-sized diced pieces.
Then I cook the veggies in a pot with a small amount of oil or water until they’re tender.

Then, I add the garlic, *protein of choice, optional poultry, and Dulse seasonings to the pot and cook for 30 seconds.

I pour in the broth and bring it to a boil, then I reduce the heat to a steady simmer for about 10 minutes or more.

Lastly, I add the cooked pasta, salt, pepper, and parsley to the soup and warm everything together, adding more seasoning if desired.

*See recipe notes for using soy curls. You can also omit all protein options, and this soup will still be delicious!

Ingredients
Method
- Boil water for pasta and cook according to directions.
- Heat olive oil in a soup pot. When hot, add chopped onions, carrots, and celery. Cook until onions are translucent and carrots and celery have softened, about 5 minutes.
- Stir in the garlic, faux chicken or other protein choice (see notes) and the optional dulse and poultry seasoning. Then add the broth. Bring to a boil, then reduce the heat to a low, steady simmer for about 10 minutes.
- Drain the pasta and add it to the soup with the parsley, salt, and pepper. Cook 1-2 minutes to warm everything together, then turn off the heat.
- Taste it and adjust seasoning if desired, then serve.
Notes
- ALTERNATE PROTEINS:
- 6 ounces of drained and cubed extra-firm tofu
- 1/2 – 1 can of chickpeas, northern beans, or similar white beans, drained and rinsed
- 2 ounces dehydrated soy curls, chopped:
- -If using soy curls, rehydrate them in hot broth or water (enough to cover the curls) for about 5-10 minutes, then squeeze out the excess liquid well before adding the soy curls to the soup.
