Celeriac Mashed Potatoes Bring Up the Flavor!

This was the song I sang with my grandfather when I was very small. It was our swing set song. We sang it while swinging back and forth, looking at the sky.  And I imagined all those fluffy clouds as mashed potatoes. They were my favorite food.

A lot of changes have taken place since way back then but I still love mashed potatoes. Of course, now I make them vegan! 

And celeriac mashed potatoes take my favorite food to another level altogether!

This brown sugar frosting demands the perfect canvas to show off its high-class taste.

That’s why bougie brown sugar frosting goes so well with our Very Vegan Vanilla Cupcakes or our Especially Espresso Chocolate Cake. And it tops our Bangin Banana Cake beautifully.

There are many uses for this brown sugar frosting but you must give it the respect it deserves. Because this is no ordinary frosting. And you don’t just throw this together like any old icing treat. This coddled classy confection needs attention or it won’t come to your party.

And if bougie brown sugar frosting feels its non-dairy milk mixture isn’t cold enough or the non-dairy butter isn’t room temperature then it will bounce. A broken bougie brown sugar is not what you want!

Oh Behave, baby!

But this frosting will behave as long as you give it what it needs to be happy. And when that happens, brown sugar frosting is a beautiful thing. A brown sugar whipped cream dream.  So it’s worth the extra attention you must give this high-class creation.

I knew this recipe was a keeper when Don tried it and said we had to make this one again. That is your guarantee that this frosting is the real deal. Hey! It has the Big Guy seal of approval!

The Bougie Brown Sugar Requirements

So here’s the deal: temperature is key. But, if your brown sugar frosting isn’t happy with the temp and decides to split, as in separates, literally, you can coax it back by warming or cooling the mixture, depending on the problem. It’s best to make sure the milk mixture and the vegan butter and shortening mixture are at room temperature before mixing together to avoid problems.

Also, I found it’s best to use this frosting as a topping, not a filling. Bougie Brown Sugar Frosting likes to be showcased, not squeezed between layers as I tried here:

No powdered sugar, no problem!

This frosting has saved my day when I make a cake and realize, too little, too late, that I don’t have enough powdered sugar for the frosting. An online search provided an answer and I heart eating is my hero. It requires no powdered sugar and tastes amazing. And I veganized the recipe. Kate’s frosting, made vegan, is the best. Love, love, love.

Bougie Brown Sugar Frosting

No powdered sugar necessary when you make bougie brown sugar frosting. It’s a beautiful thing!

Ingredients Method

Ingredients
  

  • 1 1/4 cups soy milk
  • 1/3 cup all-purpose flour
  • 1 tablespoon vanilla
  • 3/4 cup sustainably sourced vegan shortening or use 1 1/2 cups shortening and omit vegan butter
  • 3/4 cup vegan margarine/butter like Miyokos brand
  • 1 1/2 cups brown sugar

Method
 

  1. Place non-dairy milk in a small saucepan on medium heat.
  2. Whisk in flour and continue to whisk until the mixture turns thick and has a mayonnaise-like consistency.
  3. Set aside to cool to room temperature until no heat is left in the mixture.
  4. Place room-temperature shortening and margarine or butter in a stand mixer with brown sugar and mix on medium-high for about 3 minutes.
  5. Add vanilla to the cooled milk/flour mixture and blend well.
  6. Add milk mixture to butter/sugar mixture in a stand mixer.
  7. Let frostiong mix on med/high for another 5 minutes until no sugar granules are detected.
  8. Use promptly on cooled cake and refrigerate to store.

Espresso Chocolate Cake. Enough said.

But of course, there’s always something more to say about vegan cake, right? I mean, what’s not to love about this perfect dessert? And to think it involves no eggs, no dairy, hence no cruelty!

Miss Trunchbull’s punishment

If you saw the movie Matilda, you must remember the punishment Miss Trunchbull gave to Bruce Bogtrotter, right? Eat an entire chocolate layer cake in one sitting. OMG so how is that a punishment?! Well, I guess Miss Trunchbull did make everything seem scary and torturous but, chocolate cake?! That was a thing of beauty! That kid got off easy, IMHO.

Can you imagine just sitting down to a whole chocolate cake without any reservations? No thoughts of calories, getting sick, having to share? Just eating and eating as much as you want. Hmmm. Give me a minute.

Real life with Espresso Chocolate Cake

Okay, I’m back. And yeah, that’s only good for dreaming about but not really doing. But what a fun dreamy moment it was!

So whether you want to recreate the scene from Matilda or you just want to make a beautiful chocolate cake to share, our Especially Espresso Chocolate Cake is your go-to recipe.

This cake is a tried and trusted recipe that we make often at our house. And whether in cake or cupcake form, it has never failed to turn out perfect every time. Because the espresso (or coffee) addition gives a depth of flavor that makes this cake stand out from the rest.

Okay… I said the cake has never failed but I didn’t say my attempt at a layer cake with squishy filling was always successful… I was going for the Matilda cake, but…

Will travel for chocolate cake

So this recipe is from a cookbook I’ve had for years that came from The Moosewood Restaurant in Ithaca, NY. Several years back, our family was travelling in upstate New York, visiting our oldest son Bryan in college. Finally an opportunity to eat at one of the iconic vegetarian/vegan friendly cornerstones of the restaurant world! We drove a bit out of our way that day to make a stop at Moosewood. But it was a delicious experience and now a fond memory. And in a perfect world, Moosewood’s vegan selections would take the place of all McDonald’s restaurant foods. Because we’d all be the better for it. Daydreams are a beautiful thing.

But until that perfect world becomes a reality, we’ll all just have to keep pushing forward, making positive changes wherever we can and encouraging others to join us. And I will just keep making vegan cakes for everyone! You can too! (No Trunchbull force-feeding necessary!)

Espresso Chocolate Cake

A vegan chocolate cake with a rich depth of flavor from the addition of espresso.

Ingredients Method Notes

Ingredients
  

  • 3 cups flour
  • 2 cups sugar
  • 2/3 cup cocoa powder
  • 2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 2 cups espresso or coffee, chilled
  • 1 tablespoon vanilla
  • 4 tablespoons vinegar

Method
 

  1. Preheat oven to 375 degrees F. Prepare 2 round 8 or 9-inch cake pans or 1 9×13-inch cake pan by greasing and lightly coating with flour or cocoa powder. Or prepare 24 cupcakes liners in a cupcake tin.
  2. Sift or whisk together the flour, sugar, cocoa powder, baking soda, and salt in a large bowl.
  3. Combine the vegetable oil, cold espresso or coffee, and vanilla.
  4. Add the wet mixture to the dry mixture and blend until smooth. (1-2 minutes by hand)
  5. Add the vinegar and stir quickly to combine until the vinegar is evenly distributed. Don't over-blend it.
  6. Pour the batter into the pan right after blending.
  7. Bake for 25-30 minutes for 8 or 9-inch pans, 30-35 minutes for 9 x 13-inch pans, or 20-25 minutes for cupcakes. Check for doneness with a toothpick. Cool on a wire rack.
  8. If making cupcakes, pop the cupcakes in liners out of tins after 3-5 minutes to prevent liners from peeling away from the cupcakes.
  9. Frost as desired. Try our better buttercream frosting. Link in notes.

Notes

If you don’t have coffee or espresso, you can still make this cake with an equal amount of water. It just won’t have the same depth of flavor. But still good!

Bangin Banana Cake never goes out of style

Banana cake is great because you can make it any time of the year. There’s no special season you must wait for to enjoy this confection. And bananas are available all year long. Bangin banana cake is a beautiful thing. But the only thing that makes it difficult to make this treat, is if you have someone at home that eats bananas like they are going out of style!

And yes I do! No Banana Cake For Me!

So, yes, Zack eats bananas every day.

I used to have an excuse to make banana bread and banana muffins and my favorite, banana cake. You know when bananas start to turn brown they’re in the perfect condition to make a treat!

But my bunch of bananas never has a chance to turn brown anymore! They get eaten before they make it to the brown banana dessert level.

I even buy extra bananas so I’ll have too many!

But Zack always meets the challenge and just eats more bananas! He has them on cereal or for smoothies or peanut butter sandwiches. And mostly, he just eats them as is.

Last week, I tried wrapping up a couple of bananas, setting them apart from the rest of the bunch. When I returned to make the banana dessert, all that was left was the banana skin tops… Wrapped back up! Sigh… Maybe someday I’ll make a banana cake again.

There’s still hope for everyone else!

So if your family eats a normal amount of bananas like most of the rest of the population, and you have some that make it to the brown-speckled stage, rejoice! You now have the best part of the ingredients for a bangin’ banana cake of your own!

You’re making the banana cake? Can I come over?

Here’s a recipe I highly recommend to top this cake: Bougie Brown Sugar Frosting.

But you could also make the Better Buttercream Frosting for a quicker yet just as yummy topping!

And, if you make the frosting, and you find there’s a lot left over, you could then make Especially Espresso Chocolate Cake.

And then we’ll all probably need a cleanse or a purging of the sugar from our cupboards or something besides dessert…until tomorrow?!

Bangin Banana Cake

Ingredients
  

  • 1 1/4 cups soy milk we like 2 ingredient brands like West Soy or Trader Joe's shelf-stable soymilk
  • 2 teaspoons apple cider vinegar
  • 1/4 cup canola oil or other mild cooking oil
  • 1 cup mashed bananas ( about 3)
  • 1 1/4 cups sugar
  • 1 tablespoon vanilla
  • 2 1/2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts optional

Method
 

  1. Preheat oven to 350 degrees F.
  2. Lightly grease a 9 x 13-inch baking pan.
  3. Mix soymilk in a measuring cup with vinegar and set aside for 5 minutes or more to thicken.
  4. In a large bowl, mix together oil, mashed bananas, sugar, and vanilla.
  5. In another bowl, whisk or sift together, flour, baking powder, baking soda, salt, and nutmeg.
  6. Next, mix 1/3 of the dry ingredients into the wet ingredients.
  7. Then mix in 1/2 of the milk mixture.
  8. Then add another 1/3 of the dry ingredients and then the rest of the milk mixture, and lastly add the rest of the dry ingredients, along with the nuts, blending well.
  9. Pour batter into a 9 x 13-inch lightly greased cake pan and bake in the preheated oven for approximately 30-35 minutes, checking with a toothpick for no sign of wet batter.
  10. Let cool on a wire rack before frosting.

Miraculous Minestrone Soup is a bowl full of good and wonderful things like vitamins, minerals, and a ton of good taste! You just can’t go wrong with soup!

It seems a miraculous feat of creative culinary magic when you think about all the goodness in a bowl of minestrone soup, right? You have greens, beans, potatoes, tomatoes, carrots, peas, celery, onions, corn, zucchini, pasta, veggie broth, and your herbs of choice. So much in one little bowl! You could make a rap outta that! Wait, there already is! See it here 🙂

After I made my first pot of soup, I was overjoyed. I wanted to share it with everyone.

After growing up on Campbell’s condensed soups, a homemade soup tastes so much better!

Canned soup, is the gateway to vegetarian food.

When I decided to adopt a vegetarian diet in 1977, I was 16 years old. I didn’t know much about cooking but had read Peter Singer’s eye-opening book, Animal Liberation, and I was outraged, saddened, and moved to make a change.

I basically started subsisting on either Campbell’s vegetarian vegetable soup with a peanut butter and jelly sandwich or Campbell’s tomato soup with a grilled cheese sandwich. I’m grateful for Campbell’s but happy for the evolution of vegan alternatives. Panera Bread’s vegan-friendly choices, for instance, are great, and Chipotle is awesome. It’s exciting to find all the other vegan selections available in restaurants and grocery stores everywhere.

There is still a long way to go to improve the options and expand the choices but coming from the 70s, we’ve come a long way, baby!

Major Magic in Miraculous Minestrone Soup

A major magic miraculous minestrone soup bowl full of goodness!

Ingredients Method

Ingredients
  

  • 1-2 tablespoons oil
  • 1 medium-large onion, diced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 cup pasta like elbows, small shells, ditalini or broken spaghetti into 2-3 inch pieces
  • 2 cups fresh baby spinach but if not using baby spinach, tear into smaller pieces or use 1/2 box frozen spinach, thawed and sqeezed to drain
  • 1 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1/2 teaspoon celery seed optional
  • 8 cups vegetable broth
  • 1 can diced tomatoes
  • 1-2 small to medium potatoes, diced
  • 1/2 small zucchini, chopped small optional
  • 1 can cannelini beans, drained and rinsed or any beans you prefer
  • 1/2-1 cup frozen peas
  • 1/2 cup frozen corn optional

Method
 

  1. Heat oil in a large soup pot on medium-high heat.
  2. Add onions, celery, and carrots. Cook until softened a bit, about 8 minutes.
  3. Meanwhile, boil water for pasta and then cook pasta until done. Drain and set aside.
  4. When the onions and veggies in the soup pot are softened, add spinach now, if using fresh. Cook until wilted down. Add herbs and cook for 1 more minute.
  5. Pour in vegetable broth and tomatoes, then add potatoes and zucchini. Bring soup to a boil and cook for a few minutes.
  6. Reduce to a simmer and add peas, corn, beans, cooked pasta, and frozen spinach if not using fresh. Simmer on low for another 5 minutes or so to heat through then serve warm.

What’s Better Than Beef Stew? Vegan Beef Stew!

Vegan beef stew is better! Because it has no meat, but lots of veggies. And it tastes just as good as any real beef stew.

Believe it vegan beef stew is one of my favorite warm bowls of comfort and joy that I love so much when it’s cold outside. And it’s one of the foods I miss during the summer but don’t let myself make it until the first frost. Then it makes it even more special, knowing it only comes at certain times of the year.

Waiting Through The Seasons

So the foods that remind me of spring are asparagus, new potatoes, fresh berries, fresh salads, and pretty much anything bright green… spring green.

And summer means corn on the cob, potato salad, tomatoes, zucchini, and actually any barbecued grilled veggies, watermelon, and strawberry.

Then for autumn, anything and everything with pumpkin and pumpkin spices, apple cider, apple pie, warm soups, and butternut squash.

And last but not least, winter foods. Ahhh, winter foods. The longest season in the Northeast U.S. and the season of food that makes me happy every year.

Because the warm casseroles, the baked goodies, and the cranberries return! And the holiday dinners, parties, cookies, and pies, oh my! And of course, mashed potatoes, gravy, green bean bake, vegan macaroni and cheese, and the Believe It Vegan Beef Stew. MMM-Mmm.

But winter isn’t my favorite. That first snow is pretty. But after the fifth snowstorm, not as much. And I find by February I’m more than ready for spring and warmer weather. Because I miss the birds, the sounds of nature, and the signs of life outside the window. I’d appreciate any evidence of movement other than a snowflake. A little green on the ground again or on the branches of the grey trees is what I’m craving.

I’ve heard it said that Westhampton Beach has a population in the ballpark figure of 30,000 people in the summer. In the winter months, it supposedly drops to something like 3,000. All I know for sure is, it gets much quieter, businesses close up shop and everybody and everything seems to move inside. Then all the people, the lawn furniture, and the colors disappear.

The Tuesday after labor day has the moniker “Tumbleweed Tuesday” around here and it lives up to its name. There’s a slowing down that goes along with the disappearance of the traffic, the long lines, and the unfamiliar faces; but the light that shines through all this abundant winter darkness lies in the kitchen.

Head to The heart of the Home and Make Vegan Beef Stew

After spending summer months trying to avoid the oven and eat fresher, lighter fare, it’s inviting to head back to the warmth of the kitchen and the comforting foods just waiting to be recreated when the temperatures drop.

One of the yummiest wintertime foods in our home is Believe It Vegan Beef Stew. It’s a bowl full of flavor like a warm loving hug, corny as that may sound.

Believe It Vegan Beef Stew is just one of the reasons that help me realize the winter isn’t all gloom and doom. The snows bring a new kind of beauty and a warm cup of tea by the fireplace is the perfect invitation for a good book. My love of fuzzy socks and flannel pajamas is re-found and all the good movies and tv shows are back, so, gotta look on the bright side!

More to Love

So I guess the conclusion is, all the seasons have something good to offer. It’s a beautiful thing. And with winter lasting extra-especially longer than the rest of the seasons, around here, there’s more eating going on. And by the end of winter, more of me to love, too! Thank goodness for spring and summer activities!

Believe It Vegan Beef Stew

A warm, filling bowl of comfort food keeps you happy through the coldest of winter days.

Ingredients Method Notes

Ingredients
  

  • 1 9 oz. package vegan beef tips (like Gardein) OR use 10 oz. of Beyond Meat Plant-Based Steak Tips or 8 ounces of mushrooms
  • 2 tablespoons oil
  • 1 large onion, chopped (about 1 cup)
  • 2-3 medium carrots, (about 1 1/2 – 2 cups) chopped
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 3 tablespoons flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon all spice
  • 2-3 medium potatoes (about 2 cups) cut into bite size pieces
  • 1 cup frozen peas
  • 1/2 cup red wine
  • 3 cups broth use faux beef broth like Better than Bouillon No Beef Base, or any vegan mushroom or vegetable broth
  • salt and pepper to taste

Method
 

  1. Heat a large skillet over medium-high heat and add 1/2 the oil to the pan.
  2. Lightly brown vegan beef tips (and/or mushrooms) then remove from pan and set aside.
  3. Add the rest of the oil to the pan and then add onions, celery, and carrots, cooking until translucent and softened- about 5 minutes or so. (If the pan starts to brown too much, add a bit of broth or water to deglaze the pan.)
  4. Add seasonings, flour, and garlic to the pan and cook an additional 1-2 minutes.
  5. Slowly add wine and then broth while stirring.
  6. Add potatoes and peas and bring to a boil. Reduce heat to a simmer and cook for 25 – 45 minutes, uncovered. Stew is done cooking when potatoes and carrots are fork tender and sauce is thickened.
  7. Return beef tips (and/or mushrooms) to the pan for a few minutes to heat through. Finish with a dash of salt and pepper to taste.

Ahoy, Mateys!

Why do you need a not tuna sandwich? Because you are feeling adrift without your old standby tuna fish sandwich?  Marooned on your own private desert isle while others enjoy their can of chicken-of-the-sea? Then come about and sail over to the Hamptons Vegan harbor to make your very own naturally nautical not tuna sandwich!

This super tasty filling will have you exclaiming “shiver me timbers!!” after the first bite.

“Aarrggh!”, you say?! Impossible, you think?

Naturally Nautical not tuna sandwich

A substitute for tuna, made with chickpeas.

Ingredients Method Notes

Ingredients
  

  • 1 15 ounce can or box chickpeas (aka garbanzo beans)
  • 1/4 cup vegan mayo
  • 2-3 tablespoons onion minced I prefer red
  • 1/4 teaspoon Old Bay seasoning optonal
  • 1/2 stalk celery, finely chopped
  • 2 tablespoons toasted sunflower or pumpkin seeds,salted
  • 1 tablespoon finely chopped pickle or pickle relish optional
  • 1 teaspoon maple syrup
  • salt and pepper to your liking

Method
 

  1. Drain chickpeas and pour them into a bowl or pie plate wide enough to mash. Mash up chickpeas with fork or potato masher leaving some whole. Add in rest of ingredients. Use for sandwich filling, dip for crackers or wrapped in a lettuce leaf.

Notes

My favorite way to enjoy this sandwich is on lightly toasted ciabatta bread or roll with romaine lettuce and a thick slice of tomato. Love it!

Best Vegan Stops in Southampton on Main Street

Let’s Go To Main Street, Southampton, NY

If you’ve heard of the Hamptons you have probably planned a stop in the village of Southampton, NY. Logistically, it’s like the epicenter of the area.

Southampton has a long history beginning in 1640. It is the oldest English settlement in New York State. And their history is well-preserved by the Southampton Historical Society. There you will find a one-room schoolhouse, an old barn, and some very interesting facts about the area, on this property. It’s located on Old Meetinghouse Lane.

The village of Southampton has a quaint family feel within its boundaries. From the tree-lined streets and older well-kept homes to the many businesses that have been around for, it seems, as long as the village itself. And it’s full of charm.

It’s a year-round community that continues to thrive. And it’s built on centuries of hard-working families, that stay the course. It’s old money mixed with new blood. That’s what feeds the growth creating the strong bones of Southampton, NY.

A vegan in Southampton

Although Southampton takes pride in its history, it’s open to positive change, too. And The Hamptons Vegan was happy to find a welcome mat for vegans in some of the establishments in the area!

But, of course, we hope to see more in the future. Yet, we are excited to share with you the inviting shops and restaurants we did discover. Come on, let’s go!

The first stop is near Main Street, Southampton

So even before arriving on Main Street, you should stop for a breakfast bagel, with one of the delicious vegan cream cheeses. It’s the original Goldberg’s Bagels on County Road 39. And they are fantastic! So we’ll show you a taste:

Then swinging back on County Road 39/Route 27 (the Sunrise Highway) you will see an inviting sign for Saaz. Vegans (and everyone else) can find enjoyable choices here at Saaz Indian Cuisine. Because their extensive vegan options impress!

Then just down the road, at 20 Hampton Road, you will see the big white building belonging to Citarella Gourmet Market. And you must pop in for a wide selection of vegan-friendly items.

On Main Street Southampton

So after tearing ourselves away from all the yummy bagels at Goldberg’s, all the entrees at Saaz, all the selections at Citarella’s, plus those Tate’s vegan cookies, we finally make it to Main Street, Southampton. And we are not disappointed at what we find for vegans. So let’s start with the Golden Pear Cafe, a business that’s been satisfying customers since 1987.

Next, head over to the Second Nature Market, at 70 Main Street Southampton for a must-stop on your stroll. Because their choice of food, juices, supplements, skin, and body care products is extensive. And many of them are vegan. So stock up!

Well, we’d love to check out more of what Southampton has to offer. However, the day is winding down and it’s time for dinner and the cocktail hour. So we’re heading over to 75 Main for a bite to eat, and a creative libation.
